What is actually going on

A booking system that releases inventory on a schedule turns a table into something closer to a ticket. Everyone knows the moment; almost nobody gets through it. That converts the constraint from money into attention and timing.

Above that sits the same unpublished layer as everywhere else in this list: the tables that never reach the window at all, held back for people the room already knows. No amount of refreshing reaches those.

We have deliberately not published specific release times or restaurant names here. Those change constantly, and a page that stated one confidently would be wrong within months — which is exactly the failure this whole cluster is built to avoid.
